Spanish Orzo

I decided to make my own Spanish rice, but I like the consistency of orzo much better and wanted to give it a try.  It worked out great!!  This is a very quick and simple side dish to accompany any mexican dish, or enjoy as a meal.



Ingredients:

7 oz. can Chicken Broth
7 oz. can Diced Tomatoes
3 oz Tomato paste
1 cup Mexi Blend Corn
1 large onion
12 oz. Orzo
1/4 tsp. Cumin
1/4 tsp. Ancho Chili Powder


Directions:

Prepare Orzo according to package instructions.  Be sure to heavily salt the water in order to flavor the pasta.  Drain and set aside.  While the orzo is cooking, dice the onion and saute' until soft.  Add the remaining ingredients and bring to a simmer.  Add the drained pasta and stir together until all ingredients are incorporated.  Yummmm!!!
