Rotisserie Chicken Salad

My friend Meredith swears that this is the best chicken salad she has ever had!  The recipe is a result of having a rotisserie chicken that needed to be eaten, being hungry, and just throwing things together.  I figured that I would write down the ingredients as I made it this time because I never knew what the exact measurements are.  So here goes, hope you enjoy!




1 Whole Rotisserie Chicken (light and dark meat), skin removed, shredded
2 Celery Ribs, chopped
1/2 Medium Onion, chopped
1/4 C (heaping) Sweet Pickle Relish
1/4 C (heaping) Mayonnaise
1 Tbsp Grain Mustard
1/2 tsp Seasoned Salt
1/2 tsp Black Pepper
1/2 tsp Garlic Powder
1 tsp parsley flakes
1/4 tsp Cayenne Pepper

Combine all of the ingredients in a large bowl, being sure to cover all of the shredded chicken with the mayonnaise and mustard.  Once mixed, food process in batches to desired consistency.  For a more rustic or chunky chicken salad, coarsely chop all of the chicken and vegetables before adding the remaining ingredients and mixing.
