Garden Vegetable Primavera

In an effort to use the plethora of veggies that I had from the garden, I made this delicious sauce.   The key is to allow the ingredients to cook (simmer) so that the flavor is enhanced.  There aren't too many steps to the process, but this recipe does take some time.

Ingredients:

Garden Vegetables (I used an assortment of tomatoes, carrots, red bell peppers, and patty pan squash)
2 carrots, peeled and diced
1 small onion, diced
1 Tbsp minced garlic
1 Tbsp fresh thyme, chopped
1 Tbsp fresh parsley, chopped
2 Tbsp fresh basil, chopped
Olive Oil

Directions:

Preheat the oven to 400 degrees and prepare the tomatoes by chopping and tossing in olive oil, salt, and pepper.  Cook for 20 minutes.



Add the carrots to a pan with olive oil and saute' until softened.  Chop the remaining vegetables and add to the pan once the carrots have softened.  Cook on medium low heat until all of the vegetables are soft.



Add the tomatoes and all of the juices to the pan and allow to cook for about 15 - 20 minutes on medium low heat.


Once all of the vegetables have cooked together, add the herbs, mash to your preferred consistency with a potato masher and allow to continue cooking on low heat for about 15 minutes.  Serve over top of your favorite pasta.  Enjoy!!
